5 Healthy Meals You Can Make With These Muffin Tin Recipes

healthy ingredients

There are as many easy, tasty and quick meals you can make in muffin tins as your imagination allows. And we’re not just talking about sweet snacks and cakes. We’re talking about good-for-you, lip-smacking muffin tin recipes that can be made quickly, are nutrient-rich and get dinner on the table without a whole lot of fuss. Here are five of our favorites to help get you started.

Turkey Mini Meatloaves

The genius thing about this muffin tin recipe is that it uses whole wheat couscous (a grain-like pasta), zucchini and a bunch of savory flavor boosters like Dijon mustard and BBQ sauce to make these mini, ground turkey meatloaves into little works of edible art. Everything gets mixed in one bowl, saving you on the clean-up time and effort. And best of all? The mini loaves cook in half the time of a regular meatloaf. Serve with a side of mashed sweet potatoes and steamed broccoli and dinner’s done!

Muffin Tin Crab Cakes

Who needs a deep fryer when you can cut out a bunch of oil-laden calories and up the flavor with these muffin tin crab cakes? Scallions, light mayonnaise, pepper and celery salt give these tasty bites a punch of savory goodness. You can use tinned crab meat or look in your grocer’s refrigerated section for crab meat, making this recipe extra easy and time- saving. Serve with a side of crunchy coleslaw and your fave tartar sauce for a complete meal.

Breakfast Hash Brown Cups

Who says these breakfast hash brown cups are only for morning meals? Not us! Over at Damn Delicious, there’s this recipe for the any-time-of-day meal made with crisp potatoes stuffed with eggs, bacon, spinach and mushrooms. But we agree with the author — you can sub these ingredients for your favorites — maybe shredded cheese, egg and diced kale? Or diced red pepper, eggs and fresh herbs. The choice is yours. Serve with a side salad, some crusty bread and you’re good to go!

Veggie Wonton Cups

Store-bought wontons are this recipe’s muffin-tin liner to give you crunchy “cups” that, you fill with a host of veggies, black beans, spices and herbs topped with cheese and a yogurt chipotle drizzle. Found on the Peas & Crayons blog, this recipe is “uber customizable.” Not feeling the black beans? Add chickpeas. Want a hit of protein? Add precooked chicken, ham or turkey cubes. Serve with a spinach salad or a bowl of tortilla soup for dinner and you’re sorted.

Mac and Cheese Muffins

High-fiber macaroni (why not?!), Gruyere and sharp cheddar cheeses, frozen spinach, garlic, spices and you’ve got yourself some homemade mac and cheese muffins from the Emily Bites blog! What’s not to love about making mac and cheese your way, upping the fiber and veggies and enjoying an easy dinner that you can serve with grilled veggies or your favorite green salad? Don’t blame us if the crowd wants seconds, though!
