Game day usually means a table full of heavy eats — pizza, ribs, and the crowd-pleasing favorite, chips and dip. Try this lighter take on hot buffalo chicken dip at your next tailgate.
The Right Chicken and Cheese
This recipe isn’t difficult to make, but it does take some time. For the best flavor, you’ll need to boil the chicken for 20 minutes before you put it in the oven for 35-40 minutes.
If you can’t find the Neufchatel cheese suggested in the recipe, Camembert or Brie cheeses are delicious alternatives.

If you’re sensitive to spicy food, you can use just two tablespoons of hot sauce instead of the called for quarter-cup. You’ll still get plenty of flavor, I promise.
I also added two minced cloves of garlic for flavor, one cup of spinach and a handful of chopped parsley. I also advise you to slice your water chestnuts before adding them to this recipe. They add a nice crunch to the dip.

I served this with toasted, whole corn tortillas and marveled at my five-year-old daughter’s ability to turn most anything, including this dip, into dinner. She asked for a few flour torillas and turned this recipe into “chicken and cheese tacos.” And why not? Add a side salad and dinner is served.
